Place the lamb in a large bowl. Drizzle the vegetable oil over, sprinkle with the Mexican spice mix and combine well. Season generously with salt and set aside for 10–15 minutes to come to room temperature.

If making the quick-pickled onions, do so now and put them in a serving bowl. Put the cabbage and avocado in their own serving bowls.

To make the beetroot borani, rinse the beetroot, then put it in a food processor with the yoghurt, lemon juice and salt. Give everything a quick pulse so that the ingredients are combined but the beetroot still has a little texture to it. Spoon the mix into a serving bowl and top with the mint leaves. Set aside.

To make the sweetcorn salsa, drain the corn and put it in a serving bowl with the smoked paprika, olive oil, coriander and salt. Mix together well.

Meanwhile, preheat a barbecue grill to medium–high or a grill pan over medium–high heat.

When ready to cook the lamb, place it on the preheated barbecue grill or on the grill pan and cook for 2–3 minutes on each side until nicely charred. Remove from the pan and leave to rest for 5 minutes, then cut into thin slices and transfer to a serving bowl. Drizzle olive oil over and season with salt and pepper.

While the lamb is resting, warm the tortillas on the barbecue or griddle pan, or in the microwave according to the packet directions, until soft and pliable.

To serve, place two tortillas on each plate. Put all the other ingredients in their bowls in the centre of the table, together with the lime wedges for squeezing and your favourite chilli sauces and other condiments, then invite everyone to help themselves.

Beetroot borani is a traditional Iranian mezze dish usually made with fresh beetroot that have been boiled or roasted until soft. You could use these, or buy pre-cooked packaged beetroot from the supermarket.

If you can find authentic corn tortillas (made with nixtamalised corn) you’ll notice a massive difference in both flavour and texture. Try selected supermarkets or online.
